If you just want to play Vanilla skyrim, then it works perfectly out of the box with Wine 1.7.45. PlayOnLinux provides a solid Skyrim install, but disables a number of libraries (like Dwrite) which can make everything else harder later on, but it's how I started, and how I suspect many who will find this post will have started. I installed Skyrim using PlayOnLinux as my base. While this guide aims to be complete, you may also wish to check Vorgen's guide if you encounter troubles. If you haven't found it, /u/Vorgen's guide was immensely useful to me getting everything running. I've heard others have had success with them, but I have no experience to share here. I've not tried to get DynDOLOD or other tools running.
